In a large saucepan, heat the chicken or vegetable broth over low heat. Throughout the cooking process, keep it warm. In a separate large, deep skillet, heat the truffle oil over medium heat. Add the minced garlic and the chopped onion. Sauté them until they become translucent and fragrant, which should take about 2-3 minutes. Add the assorted mushrooms to the skillet. Sauté them until they become tender and start to brown, which should take approximately 5-6 minutes. Season with salt and a dash of black pepper. Stir in the Arborio rice and cook for another 2-3 minutes, ensuring that the rice is well-coated with the truffle-infused mixture.

Step 2

Pour in the dry white wine and stir constantly until the liquid is mostly absorbed. One spoon at a time, add the heated broth, stirring frequently and waiting for the liquid to permeate completely before adding more. Continue this process until the rice is creamy and cooked to your preferred level of doneness (usually around 18-20 minutes)
