Steps

Step 1

In a small bowl, combine the soy sauce, rice vinegar, mirin, grated ginger, sesame oil, chopped green onions (if using), and red pepper flakes (if you want some heat). Mix well and set the dipping sauce aside.

Step 2

Mix the salt and all-purpose flour in a mixing dish. To make a smooth batter, gradually add the ice-cold sparkling water and whisk gently. Try to get rid of lumps as much as possible

Step 3

Fill a large, deep pot or a deep-fryer with about 2 inches of vegetable oil. Heat the oil to 350-375°F (175-190°C).

Step 4

To ensure equal coating, dip each asparagus spear into the tempura batter. The coated asparagus should be carefully dropped into the hot oil and fried for two to three minutes or until golden and crispy. Work in batches so as not to pack the pot too full. After removing the cooked asparagus with a slotted spoon, set them on paper towels to absorb any remaining oil.

Step 5

Arrange the Tempura Asparagus on a serving plate. Serve hot with the prepared dipping sauce on the side.
