Steps

Step 1

Cooking the quinoa: Wash the quinoa underneath cold water to get rid of any bitter residue. In a medium saucepan, combine washed quinoa and water. Bring the water to a boil on a high flame, then reduce the temperature to low and cover the pot. Boil the quinoa for 15 minutes, till all of the water is absorbed and the quinoa is soft. Remove the pot from the heat and let the quinoa cool to room temperature.

Step 2

Prepare the veggies and herbs: While the quinoa is cooking, put together the greens and herbs. Cut cucumber and tomato into small pieces. Finely chop sparkling parsley, mint, and onion.

Step 3

Combine ingredients: In a big blending bowl, combine cooked quinoa, cucumber, diced tomatoes, chopped parsley, chopped mint, and chopped red onion.

Step 4

Make the dressing: To make the dressing, combine lemon juice, extra virgin olive oil, salt, and pepper in a small bowl. Pour the dressing over the quinoa and vegetable mixture into a big mixing bowl. Gently mix the whole thing collectively until it is properly mixed and lightly covered with a dressing.

Step 5

Cool and serve: Cover the bowl with plastic wrap. Place the tabbouleh inside the refrigerator for a minimum of 1/2 hour to permit the flavors to blend. Quinoa Tabbouleh is served chilled as a fresh side dish or snack.
