Steps

Step 1

Firstly, you will preheat your oven to 375°F (190°C). Then lay the chicken breast on a clean surface. With a sharp knife, carefully slice it in the middle horizontally, but not all the way through, creating a pocket for the stuffing. Season the inside and outside of the chicken with salt, pepper, and Italian seasoning.

Step 2

In a large skillet or wok, you will heat 2 tablespoons of vegetable oil over medium to high heat.

Then you will add the chicken pieces to the hot oil and stir-fry them for about 5-6 minutes or until they are cooked through and have a golden brown color add the sliced red and yellow bell peppers to the skillet. Then continue stir-frying for an additional 3-4 minutes, or until the peppers become tender and slightly caramelized.

Step 4

Pour 1/4 cup of freshly squeezed lemon juice over the chicken and peppers. Stir well to combine, allowing the lemon juice to coat the chicken and infuse the dish with its citrusy flavor.

Step 5

Once the lemon juice has been incorporated and the chicken is fully cooked, your Lemon Chicken Stir-Fry is ready to be served. You can then garnish it with fresh herbs or sesame seeds.
