Steps

Step 1

Firstly, you will heat the oil in a large frying pan over low-medium heat. Then, you will add the onion and a pinch of salt. Cook slowly, stirring, until softened and just starting to colour. Then add the garlic, ginger, coriander and stalks. Then cook for a further 2 mins until fragrant.

Step 2

Then you will add the spices to the pan. Cook for another 1 minute, by which point everything should smell aromatic. Then tip in the chopped tomatoes and kidney beans in the water and bring to a boil.

Step 3

Then you will turn down the heat and simmer for 15 minutes until the curry is thick. Make sure to season to taste, and serve with the basmati rice and the coriander leaves.
