Description

Steps

Step 1

First, you have to boil the pasta by reading the packet instructions. As this is going on, heat the oil in a sizable, deep, nonstick skillet over medium heat and cook the halloumi for three minutes, tossing regularly, until it browns. Transfer to a platter and allow the tomatoes to soften in the pan for one to two minutes. Pour into the halloumi bowl.

Step 2

After that, add the canned tomatoes to the skillet, toss in the olives and oregano, and tip in the courgettes and garlic. Stir-fry for a short while. Simmer, covered, for ten minutes.

Step 3

Now wash the boiled pasta and add the pasta to the sauce along with baby plum tomatoes, halloumi and parsley. Serve half of it right away, while the other half can wait until another day. Will store in the refrigerator covered for up to three days. Reheat over medium heat in a pan with a splash of water until very hot.
