Steps

Step 1

Firstly, you will tip the flour into a large mixing bowl. Then you will mix the yeast into one side of the flour and the fine salt into the other side.

Step 2

Next, create a well in the centre of the flour and pour in 350–400ml of warm water and 2 tablespoons of oil. Make sure to add it gradually until you have a slightly sticky dough. Then, you will need to sprinkle the work surface with flour, tip the dough onto it, scraping around the sides of the bowl. After that, you may knead the dough for five to ten minutes, or until it becomes softer and less sticky. Place the dough into a clean bowl, cover it with a tea towel, and leave it to prove for 1 hour until doubled in size.

Step 3

Then, you will need to oil a rectangular shallow tin (25 x 35cm). To fill the tin, put the dough onto the work area and stretch it. Then cover with a tea towel and leave to prove for another 35-45 mins.

Step 4

Moreover, preheat the oven to 220°C (fan/200°C) and gas 7. Make tiny holes in the dough with your fingertips to begin. You will then mix 1½ tbsp olive oil, 1 tbsp water, the flaky salt and drizzle over the bread. Place sprigs of rosemary into the dough's grooves.

Step 5

Lastly, bake for 20 mins until golden. Next, while the bread is still warm, sprinkle one or two tablespoons of olive oil over it. Next, cut into squares and serve with more olive oil, either warm or cold.
