Steps

Step 1

Prepare the dough: In a blending bowl, mix the corn kernels, all-purpose flour, milk, eggs, chopped chives, baking powder, salt, and black pepper. Stir the mixture until mixed properly and a thick batter is formed.

If you have prepared the dough and it is simply too thick, you can add a touch of milk to attain the favored consistency.

Heat the oil: Heat the vegetable oil in a large frying pan over medium heat. Add a small amount of batter to check if the oil becomes warm enough to sizzle.

Fry the donuts: Once the oil is hot, cautiously take spoonfuls of batter to the pan and spread out the donuts with a spoon or cookie scoop. Gently flatten the donuts with the back of a spoon to shape patties. Fry the donuts in batches, being cautious not to overcrowd the pan, until golden brown and crispy on both sides, for about 2-3 minutes.

Step 5

Drain and serve: Transfer the cooked donuts to a plate lined with paper towels to drain extra oil. Repeat the technique with the dough until all donuts are cooked.

Serve Warm: Serve corn fritters warm as a snack, appetizer, or aspect dish. Optionally, taste the dish with a dipping sauce including salsa, or highly spiced aioli.
