Steps

Step 1

In a mixing bowl, combine the chickpea flour and water. Whisk until smooth and no lumps remain. The consistency is to be the same as pancake batter. Add more water if needed.

Step 2

Add the chopped onion, tomato, green chili (if using), chopped cilantro, cumin seeds, turmeric powder, red chili powder, and salt to the batter. Mix well to incorporate all the ingredients evenly.

Step 3

Heat a non-stick skillet or griddle over medium heat. Brush the surface with a little oil or ghee to prevent sticking.

Step 4

Once the skillet is hot, pour a ladleful of the batter onto the center of the skillet and spread it outwards in a circular motion to form a thin pancake.

Step 5

Cook the pancake for 2-3 minutes on one side, or until the edges start to turn golden brown and crisp.

Step 6

Flip the pancake using a spatula and cook for another 2-3 minutes on the other side, until both sides are golden brown and crispy.

Step 7

Repeat the process with the remaining batter, adding more oil or ghee to the skillet as needed.

Step 8

Once all the pancakes are cooked, remove them from the skillet and serve hot with your favorite chutney, yogurt, or dipping sauce.
