Steps

Step 1

To begin with, Heat two teaspoons of oil in a pan over medium heat and gently sauté the onion for ten to twelve minutes. After adding the chilli flakes, saute the garlic for one minute. Season to taste and stir in the sugar and tomatoes. Simmer, uncovered, for 20 minutes or until thickened; stir in the mascarpone.

Step 2

Heat up one tablespoon of oil in a nonstick skillet. Once the chicken has been seasoned, fry it for five to seven minutes, or until it is cooked through.

Step 3

Next, set the oven's temperature to 220°C, fan 200°C or gas 7. Follow the package's instructions to cook the penne. Empty and dispose of with the residual oil. Spread the pasta onto a medium-sized baking dish. The chicken will then be added and swirled to cover in sauce. Top with the cheddar, mozzarella, and parsley. Lastly, bake for 20 minutes, or until golden brown and bubbling.
