Steps

Step 1

In the large bowl, season the chicken breast pieces with paprika, dried oregano, dried thyme, salt, and pepper. Set aside. In a large skillet heat olive oil over medium-high heat.

Step 2

Add the seasoned chicken breasts to the skillet and cook for 5-6 minutes on each side or until golden brown and cooked through. Take out and place aside from the skillet.

Step 3

Add the onion slices and the vibrant red pepper to the same skillet. Let the flavours mingle and infuse together as the onions cook until they become tender and release their sweet smell, which should take approximately two to three minutes.

Step 4

Add the minced garlic to the skillet and cook for an additional 1 minute, or until fragrant. Add the sliced zucchini, tossing it to combine with the flavors in the skillet. Cook for 4–5 minutes, making sure all the zucchini and onions absorb the flavor of the herbs, until the zucchini is tender but still slightly crisp, giving the dish a nice texture.

Step 5

Return the cooked chicken breasts to the skillet and toss everything together until heated through. Garnish with chopped fresh parsley and sesame seeds and serve hot!
