Chicken Enchiladas are a classic Mexican dish that's both comforting and flavorful. These enchiladas consist of tender chicken, rolled in tortillas, smothered in a savory enchilada sauce, and topped with melted cheese. They're a perfect blend of spicy, cheesy, and satisfying, making them a popular choice for any meal.

Step 1

Begin by preheating your oven to 350 degrees Fahrenheit.

Step 2

In a medium, heavy saucepan, combine tomatillos, onion, serrano, yellow chile, and 3/4 cup of water. Bring this mixture to a boil over medium-high heat. Cover and simmer until the tomatillos turn an olive-green color, which takes about 10 minutes. Transfer the tomatillos, onion, and chiles to a blender. Add the garlic and cilantro, and blend until the mixture becomes smooth. Season it with salt and pepper.

Step 3

Heat some oil in a small skillet over medium-high heat. Briefly fry the tortillas until they become golden but remain pliable, approximately 10 seconds per side. Place them on paper towels to remove any excess oil.

Step 4

Lay the tortillas out on a work surface. Evenly distribute the shredded chicken among the tortillas and roll each one up like a cigar.

Step 5

Spread 1/3 cup of the sauce in a 9 by 13-inch glass baking dish. Arrange the rolled enchiladas, seam-side down, in a single layer within the dish. Pour the remaining sauce over the enchiladas.

Step 6

Drizzle the Mexican crema over the top and evenly sprinkle cheese all over. Bake in the oven until the cheese has melted and starts to brown in spots, which should take about 30 minutes.

Step 7

Serve immediately and enjoy your delicious chicken enchiladas.
